A Simple Way to Cleanse

I discovered this simply delicious soup when looking for foods to help heal the gut. Dr. Henry Bieler (Food is Your Best Medicine) developed this nutrient-rich broth which can be used as a part of a cleanse or as a healthy addition to your regular diet.

The soup supplies plenty of vitamins, minerals and soft soluble fibre. It provides electrolytes, helps promote alkalinity, and supports gentle detoxification. I find it particularly useful for helping soothe the gut in times of illness or inflammation.

Ingredients
3 stalks of celery
2 small zucchini
2 cups green beans
1 cup parsley (stalks removed)
1 litre of water (or veggie or chicken stock)
1 TBSP ghee or coconut oil

Chop vegetables. Place water/stock and celery, zucchini and green beans in a stock pot. Bring to a boil, lower heat and simmer for 30 minutes until vegetables are soft but not overcooked.

Place cooked mixture in blender (this will make a couple blender batches). Vent lid to release steam. Add coconut oil and parsley. Blend until smooth.

Pour soup into a pitcher or mason jars. Store in fridge for up to 3 days or freeze extra. Drink 2 cups (or more) throughout the day.

Note: I’ll often substitute other vegetables, depending what’s in the fridge. Asparagus, broccoli, and kale all work well with this recipe.
